Since Reform and Opening-up, catering chain industry has gained great development, and it provided more and more job opportunities, which became the important part in the national economy. However, in China, due to the defects of the human capital motivation mechanism, catering chain firms formed low human capital level and high turnover rate, which restricted the further development and the competitive advantage compare with the transnational catering chain firms. So, how to develop the effective human capital motivation mechanism to form the core competitive advantage is the most crucial problem for the catering chain firms of China.First, this paper analyzed the main contents of the human capital motivation mechanism, and reviewed the literature about it. Based on this, from the perspective of the human capital property, human capital property theory and agency theory, this paper analyzed the necessity of the human capital motivation mechanism for the catering chain firms of China to gain competitive advantage in the future.Then this, paper reviewed the statistical yearbooks, data of listed company, survey report and newspaper to summarize the problems of the human capital motivation mechanism of the catering chain firms of China. At present, the human capital of the catering chain firms of China was increasing; however, compare with the demand, the senior and base course human capital are both in shortage; The turnover rate of it is high, academic study is low. The problems of the human capital motivation mechanism of the catering chain firms of China are following:The economic interest motivation is not enough, and it's mainly in short term which is shortage of equity incentive; Spiritual motivation and on-the-job training are also in shortage.As to that problems, this paper selected successful human capital motivation mechanism for the catering chain firms of China and foreign countries to be used for reference for them. At last, this paper brought forward policies for the catering chain firms of China:It's necessary to increase the level of compensations and to enhance stock incentive compensation, to optimize the structure of compensations; It's necessary to strengthen training to form the system of human capital accumulation for the catering chain firms; It's necessary to use culture replication from the conditions of China to enhance culture motivation; Government should adopt positive policies to promote the sound of human capital motivation mechanism. For example, government should promote the increase of the employee compensations of the catering chain firms and pay subsidies about training through many forms.The innovations of this paper are to apply the human capital motivation mechanism to research on the catering chain firms of China and to divide the human capital of the catering chain firms into four kinds. During the theory research, empirical analysis and policy recommendations, this paper analyzed the general human capital, skilled human capital, management human capital and entrepreneur human capita in great detail.
