ObjectivesIn order to improve the animal and human immunity, reducing the chancesof the animal diseases and zoonoses.Research and development the newfunctional dietary supplements, while increasing the value of agricultural andsubsidiary products comprehensive utilization.Improve the economicbenefit.Therefore using corn gluten from the by-products–corn starchprocessing as raw material to produce active peptide and research its theimmune activity.MethodsWe used electronic nose PEN3to measure volatile matter from corn gluten.On the basis of experimental parameter such as PCA, LDA. Confirm roomtemperature and refrigerated storage of corn gluten.Made the functional evaluation of the dry matter of corn gluten——corngluten in the carp feed.Used the orthogonal experiment to improve the rate ofultrasonic to assist acid heavy alkali formulation from corn gluten.Used different enzyme hydrolyzing corn gluten protein.Researched inantioxidant activity by the different enzyme hydrolysis of peptide to select thebest combination of enzymes. And through the feeding experiment in mice tostudy the immune activity of corn peptide.Results1. The result of electronic nose detection and determination of proteincontent isthe room temperature samples occured slightly metamorphic at the 4th day and the heavily metamorphic at the7th day. The stored refrigeratedoccured slightly metamorphic at the28th day and heavily metamorphic at the39th day.2. Corn glute instead of fish meal to feed carp has a different influenceongrowth performance and meat quality. Adding corn glute can replace fish mealwhen the mass fraction of5%of carp growth performance and meat quality isbetter, but instead of fish meal quality score is higher than10%, the carp growthperformance and meat quality will worse. Therefore, it is recommended thatthe carp feed in5%replacement of fish meal as feed with high quality.3. To obtain the optimal process conditions of corn gluten proteincombinations: the best process for extraction in temperature for50℃, extractingtime is6min, the optimum process for ethanol concentration was90%, the pHis12, feed liquid ratio is1:60, and ultrasonic power is700W from theorthogonal experiment. The extraction efficiency for:89.35%.4. With neutral protease first then alkaline protease can extract more cornprotein peptide, more the ability to remove up to81.28%.Discuss the degree ofhydrolysis and DPPH removal capacity ability of scavenging free radicals anddegree of hydrolysis size had no significant relationship.In the pH=7hydrolysate of DPPH clearance rate were higher than weak alkaline hydrolysisof DPPH clearance.5. Corn gluten peptides can significantly increases the immune organ indexof mice, foot metatarsus swelling degrees in mice, the mice serum antibodylevels, and monocyte/macrophage phagocytosis. This study illustrated theimmunoregulatory effects of corn gluten polypeptides has obvious.Conclusions1.Corn gluten5%replacement of fish meal applied to the carp feed can beeffectively increased the carp growth performance and meat quality.2.Corn peptide has antioxidant and immune activity...
