Perfluorinated alkylated substances are a group of manmade fluorinated aliphaticcompounds. Due to their special stable and surfactant properties, PFCs have been used for a widerange of industrial and commercial applications as processing acids since manufactured by in1960s. PFCs have been detected in a variety of matrices such as air and sediment, drinking waterand seawater, and so on. Diet has attracted attention of researchers as an important pathways ofhuman exposure to PFCs.In this paper, a method for the determination of18perfluorinated substances in riceby LC-MS/MS, and pollution levels of18kinds of perfluorochemicals in rice fromFujian had been investigated, and then, a preliminary health risk assessment of residentsvia the consumption of rice was conducted. The main contents and results of thisreseaches are as follows:(1) Through the optimization of the mass parameter of18kinds of PFCs andpretreatment method, a method for the simultaneous detection of18kinds of PFCs inrice by LC-MS/MS was developed. The results showed that: the linerities of PFBA andPFPA, PFHxA, PFHpA, PFOA, PFNA, PFDA, PFUnDA, PFDoDA and PFTrDA were inthe concentration ranges of0.03~20μg/L, PFTeDA, PFHxDA and PFOcDA in theconcentration ranges of0.05~20μg/L, PFBS, PFHxS, PFHpS, PFOS and PFDS in theconcentration ranges of0.1~20μg/L, with the correlation coefficients higher than0.990.The limits of determinations(LODs)and the limits of quantification(LOQs)of themethod were0.003~0.02μg/L,0.03~0.1μg/L, respectively. The average spikedrecoveries range from54.50%~117.96%, and relative standard deviations were less than20%.(2) The result of the investigation of the pollution level in rice from Fujianprovince showed that: the rice pruducted from Fujian province were found to becontaminated by PFCs, and the contamination levels of PFOA were significantly higherthan PFOS, in addition, the degree of pollution of PFCAs were widespreadly thanPFSAs. The detection rate of PFSAs were less than20%except PFOS. Furthermore, thedetection rate of2kinds of the short chain PFCs(PFBA and PFPA)and5kinds of thelong chain PFCs(respectively PFDoDA and PFTrDA, PFTeDA, PFHxDA and PFOcDA) were less than30%. When the pollution levels of PFCs in rice from9cities from Fujianprovince were compared, the city that the highest pollution levels of PFCs in rice was inQuanzhou where the PFOA and PFOS contents were0.2411μg/kg and0.1046μg/kgwhich obviously higher than other cities, and the total PFCs contens was0.4280μg/kg,followed by Fuzhou, and the city that the lowest pollution levels of PFCs in rice wasXiamen. The pollution levels of PFCs in rice from inland cities of Fujian was littledifference, and the contents of total PFCs was between0.2399~0.2923μg/kg.(3) The result of health risk showed that the presence of health risk ndex is muchsmaller than1, there was little immediate risk of expourse to PFOA and PFOS viaconsumption of rice from Fujian Province.
