People's dietary nutrition structure is a key standard in estimating the economic level and people's living status in most countries or regions. Now, we are approaching a well-off society in an all-round way. According to the international experiences, it is an important period with great changes to food consumption structure and gradual improvement of nutritional status. We should endeaver to perfect residents' food consumption structure and improve nutritional status on the basis of full analysis of these two aspects. Therefore, the design of database application on transform from food consumption to nutrients, which can provide us with full, continuous and dynamic data on those issues, weighs a lot.To meet this need, this paper aims at building an Access database application system with Delphi 7, on the basis of many references and authorized data, theories on economics and nutriology, and deep analysis of the transform from food consumption to nutrients. In this paper, theories on database system, food consumption and dietary balance were introduced. The basis of the transform, calculating formula and the data sources were also discussed in detail. After demand analysis, data form design, program environment introduction, and illustration of some data changes, database build and codes programed to realize every supposed function were summarized.As the database application on transform from food consumption to nutrients was designed and developed, the difficulty on this transform issue was solved, thus giving a new way in providing full and continuous dietary nutrients. Compared to other relative researches, this system has several advantages. First, it provides full and continuous data on food consumption and dietary nutrients intakes. It realizes the calculation of nutrient content of every main food every year from the founding of the People's Republic of China, and dietary nutrients intakes of residents in the whole country, five different regions, thirty-one provinces (calculating the rural, urban and all residents, respectively). Second, it enables users manage data in a more flexible and safe way, including modify, delete, add, search and output data.
