Wine is an unusual beverage in Chinese society. Since ancient times, from the emperor down to the common people are all good wine drinkers, forming a "100 Gala Order wine-not " community. Fresh goods Hongzhi, "2) .Therefore,there were larger amount wine and sales,the wine industry had an important socio-economic status.Sima Qian in the put the wine industry in the first which list of 34 profitable businesses.This situation lasted, and it was more popular in the Tang Dynasty.At that time,people drinked extravagantly which embodied most vividly in the collection of Tang. Dunhuang as the " a city submitted HUA Rong " and cultural exchange center, the features of wine drinkers were more conspicious.The period of Tang,The Five Dynasties and early song were the period of economic development prosperously.The inland Dynasties contracted with the west closely.The city of Dunhuang just lies in the exchanges of it,its social economy developed rapidly and so well the wine industry.It also reflected the wine industry development of other parts of China in miniature.The studies of wine industry of Dunhuang is benefit for fully demonstrating the performance and positioning wine culture, and it ableto provide useful economic development for contemporary Stephen.The article was divided into six parts :The first part discussed the source of wine industry from the Liquor families Of temple and officials respectively, Analysized the main source of the monastery property in Dunhuang.The second part discussed the types of wine in this period, mainly from grain alcohol, wine and distribution of liquor three components. and and the compared Liquor and Sake of Dunhuang with the Liquor ang sake of the Tang Dynasty.The third part discussed the administration and management of Dunhuang wine industry conditions from three periods prior to the mid-Tang, the period of Tibetan occupation and the period of Gui-Yi -Jun.Part IV study of Dunhuang wine brewing, and it can be divided into two parts, make Qu and brew wine. Qu was supplied by the government. Its Technology was little behind the Central Plains region.The Fifth part is about Liquor rate, wine prices and profits, and the wine industry's profits was higher.The sixth part studied the major ways of using wine of Dunhuang in this period, it divided into offical using, monasteries using and medicinal liquor;meanwhile discussed Drink containers of Dunhuang,the relations of women and wine , People's attitude toward drinking and so on.In short, wine industry as an important handicraft sector,its development will play a positive role in promoting the region's economic development; at that time ,the drinking situation in Dunhuang became an important part of the social culture.
