Objective:To explore the effect on immunological function and immune mechanism of Bifidobacterium fermented mixed fruit and vegetable juice in mice.Methods:1. Preparation and analysis the nutritional composition of Bifidobacterium fermented mixed fruit and vegetable juice: Preparation of orange juice, apple juice, pear juice and carrot juice, fermented into 3 kinds of Bifidobacterium fruit and vegetable juice. The main nutritional components are analyzed according to nutrition analysis methods.2. Effect of Bifidobacterium fermented mixed fruit and vegetable juice on Immunological Function of Mice: Mice were randomly assigned to 10 groups:the purified water control group and the 3 kinds of fermented mixed fruit and vegetable juices with low, medium and high doses groups. The index of thymus and spleen,the phagocytic capability of celiac macrophage,the level of serolysin and the degree of cutaneous delayed type hypersensitivity of mice were evaluated.3. Study on immune mechanism of Bifidobacterium fermented mixed fruit and vegetable juice in mice: Mice were randomly assigned to 5 groups:the purified water control group,non-fermented mixed fruit and vegetable juices group and the 3 kinds of fermented mixed fruit and vegetable juices with low, medium and high doses groups. Feeding for 30 days, the spleen cell proliferation and T lymphocyte subsets of mice were evaluated.The level of IL-6 and IFN-γwas determined by ELISA reagent box.Results :1. There are abundant nutrition componsitions in Bifidobacterium fermented mixed fruit and vegetable juice, such as protein, fat, sugar, water-soluble vitamins and trace elements, 18 kinds of amino acids, 8 kinds of essential amino acids ,as a nutritious food and beverage worthy of popularization.2. The phagocytic capability of celiac macrophage,the level of serolysin and the degree of cutaneous delayed type hypersensitivity of all the 3 kinds of fermented mixed fruit and vegetable juices groups increased significantly compared with control groups.3. Fermented mixed fruit and vegetable juice can enhance the proliferation of spleen cell and the expression of T cell surface markers CD3, CD4, CD8, promote the level of serum IL-6 and IFN-γ.Conclusion:Bifidobacterium fermented mixed fruit and vegetable juice is rich in nutrients and have a long shelf- life, can enhance the humoral,cellular immune and non-specific immune function, and presented dose-effect relationship.
