Objective:This subject aimed to establish a rapid detection method about sulfur fumigated Pinellia Tuber. Methods:According to change of the smell between Pinellia Tuber and sulfur fumigated Pinellia Tuber, use a electronic nose to detect them and establish a model to detect and analyze unknown samples. Then optimize and calibrate the model. Scanning the Near Infrared Spectroscopy is based on the determination of the content variation of succinic acid, alkaloids, amino acid,etc. Establish a Near Infrared model to detect sulfur fumigated Pinellia Tuber. Scan the unknown samples in order to verificate and optimize the model. Results:The succinic acid, alkaloids and amino acids had different levels of decline in the sulfur fumigated Pinellia Tuber samples. The succinic acid contect decreased by 5.66~23.46%, the alkaloid content by 17.3% and the total amino acid contect by 8.1%. The detection model which established by the electronic nose can accurately distinguish between natural drying and sulfur fumigated Pinellia Tuber. The Recognition value of the DFA model was greater than 80% and the correlation coefficient of the standard fitting curve about the forecasting and actual sulfur fumigated time reached 0.9927 in the PLS model. The recognition rate of the established model of Near Infrared detection was 96%.Conclusion:The smell and composition of sulfur fumigated Pinellia Tuber were all changed, which laid the foundation for the rapid detection of the electronic nose and Near Infrared technique. The models which were established by the electronic nose and Near Infrared technique can quickly and accurately distinguish between natural drying and sulfur smoked Pinellia Tuber.
