| The research showed that many chronic diseases like cardiovascular diseases,cancer and aging have closely correlated with oxidative damage.Tea is a popular beverage,its health care function were concerned by people since ancient times.Prevention of tea on many chronic diseases including tumors coronary heart disease has closely related with its antioxidant activity.This paper is based on the Theory on nucleophilic and electrophilic and the Forth Statistics,determined the abundances of the 11 biopolymer active centers elements(Sr,Mn,Mo,Zn,V,Cr,Fe,Co,Cu,Ni,and Ti ) in tea by inductively coupled plasma atomic emission spect rometry(ICP).Study on 11 biopolymer active centers elements distribution and nourishment value in tea.Statistical and investigated the biopolymer active centers elements group in the 14 kinds of tea,set out the sub-cluster parameters ot these tea by using three parameters sub-cluster statistical theory equation.The radical scavenging activities of the tea also have been determined。Through the research on the data of sub-cluster parameters and antioxidant capacity of 14 kinds of tea,we get the following results:(1) Tea's k ranges between 3.3 and 4.9. (2) The comparison of radical scavenging activity for different tea showed that all the tea have the radical scavenging activity,the radical scavenging activity rate is between 50%and 97%.Radical scavenging activity rate of Tian guanying tea,Qimen black tea,Baihao Oolong tea,Huangshan queshe tea and Dongting biluochen tea is above 90%,more then other tea. From the above data,tea have the power to improve immunity and to resist decrepitude.(3) The results showed that there is clear linear correlation between the distribution parameter of biopolymer active centers elements ln(k2r1/r2) and the radical scavenging activity parameter lnF.This demonst rates that the antioxidant capacity of tea can be predicted using the dist ribution parameter of its biopolymer active centers elements. |
