Biopolymer active center elements are the composition of the alimentalorganism and the primary inherent cause of catalysis and activation, theirmgestion, accumulation, transportation and distribution have relation to thebiological function of the organism, so we can predict the characteristics of theelemental distribution by the fourth statistical mechanics founded by ProfessorJin and further study the biological function of the organism with diet therapyeffect. Thus we bring forward a new thought and a new method to study themechanics of the Chinese traditional diet therapy.Antioxidant capability is one of the important functions of the biologicalorganism. Eliminating radical in human body by taking the alimental organismwith antioxidant capabilities is beneficial to the health and can make us longlife. In the paper, we researched the relationship between the distribution ofthe biopolymer active center elements and antioxidant capabilities in theorganism with diet therapy effect.By calculating the sub-cluster parameters and the total antioxidant capability parameter of some kinds of fresh vegetable with diet therapyfunction, we found that there is clear linear correlation between distributionparameters of biopolymer active center elements (1-x)1/3 ln(r1r2/k),(1-x)1/3 ln(k2r1/r2) and antioxidant capability parameter ln[F(1-x)3] , and whichshow monotone decreasing and monotone increasing respectively. Then weresearched the distribution of biopolymer active center elements and thecontent of Vc and Ve in 9 kinds of vegetable and 5 kinds of fruit, and resultedin the conclusion that sub-cluster parameters (1-x)1/3 ln(r1r2/k)(1-x)1/3 ln(k2r1/r2) and the content parameters of Vc and Ve InVc(1-x)3,InVe(1-x)3 have the same linear correlation.In this paper, the content of water and biopolymer active centerelements and hydroxyl scavenging capability in 15 kinds of edible fungi werealso determined. And the sub-cluster parameters and hydroxyl scavengingcapability parameters were calculated. The analytic results further confirmedthe conclusion put forward in this paper.So, we can study and estimate theantioxidant capabilities of every kinds of alimental organism quantitativelythrough their distribution of the biopolymer active center elements.
