Linxia is located between the Qinghai-Tibet Plateau and Loess Plateau, and full of the National Islamic customs. To develop Muslim beef and mutton have a better foundation and unique cultural advantages, to further strengthen the Muslim beef and mutton industrial development and enhance market share. Using physical and chemical methods analyzed nutritional ingredient of Muslim beef and mutton, and applied analysis of variance (ANOVA) to analyze difference of it .The results showed: the nutrients of Muslim beef and mutton was comprehensive. To compared with others, it had high protein (21.08%), moisture (71.99%) and ash (1.21%); low fat (5.15%); and rich of calcium (7.05mg/100g). Muslim mutton had high protein (18.94%), ash (1.84%) and carbohydrate (0.99%); water (67.57%), fat (10.67%) in moderate; and high calcium (21.21 mg/100g), phosphorus (208.59 mg/100g). Statistical analysis showed that the differences of the nutritional ingredient of forelimb, dorsal muscles and hindlimb in beef are not obvious, the differences of the nutritional ingredient of forelimb, dorsal muscles and hindlimb in mutton are not significant,the difference of beef and mutton nutritional ingredient is extremely significant.In order to surveys health status of the Muslim beef and mutton in Linxia, we applied the microbiology test methods examining Muslim beef and mutton, which from different parts or different areas in Linxia for microbial detection. The results showed that: there were 73.8% samples up to the standard in 160 in total numbers of colonies, 77.5% total coliform bacteria; and only 6.25% pathogen was detected. The total number of colonies and coliform bacteria were high in different areas and different parts of beef and mutton, the pathogen were low, beef and mutton neck of the total number of colonies and coliform bacteria were minimum in slaughterhouse the pathogen was high. Test results showed that the Muslim beef and mutton were contaminated seriously in Linxia.For the purpose of realizing quality and safety Muslim beef and mutton from the source to the end,and build a Muslim beef and mutton health security of a solid barrier. We investigated and analyzed the health quality of beef and mutton in breeding, slaughter, processing, packaging, storage and marketing. The results showed that, the condition of Muslim beef and mutton production and quality of health still had many problems, Muslim beef and mutton has still under "casual, dirty, chaotic, and poor" situation. We should greatly improve the quality and safety of Muslim beef and mutton in future, and produce under the health standard.
