Objective: in order to improve health supervision itself in small Chinese food style restaurants, reduce of food risk as much as possible, ensure food safety for public, and assure food safety for the consumer.Method: look back the experiences of health supervision in small Chinese food style restaurants, small food markets, etc., and find out the mechanism of health supervision in small food company.According with food process technology, analyze the risk factors from it, set up or definite index system to assess effectiveness of food health supervision improved.Carry out the mechanism of the health supervision in small Chinese food style restaurants and revise it, assess effectiveness of food health supervision improved.Result: Carry out the mechanism of the health supervision in small Chinese food style restaurants first and then issue food hygiene license, it is not obvious that effectiveness of food health supervision improved, with no significant difference as compared to the control, food risk and food safety have no obvious differences. And in reverse, it is obvious that effectiveness of food health supervision improved, with significant difference as compared to the control, food risk and food safety have obvious differences improved. Conclusion: the model of the health supervision in small Chinese food restaurants is to issue food hygiene license first and then to Carry out the mechanism of the health supervision in small Chinese food restaurants.its mechanism is to rectify periodically, to guide public opinion with news media, to guide the classified, to carry out administrative penalty, and to adopt administration, to show health supervision, to train food handlers.The assessing index system of health supervision in small Chinese food style restaurants include clean, main sanitary fixtures, basic PAMP(public announcements, mark and profiles), medical-food hygiene knowledge qualified certificate, fundamental food hygiene knowledge.
