As natural nutrient-rich health food for human beings, bee pollen is an important source of natural antioxidants due to its rich phenolic compounds. In this paper, antioxidant activities of bee pollen extracts were determined in vitro systems, and antioxidative components from the extracts were identified using high performance liquid chromatography (HPLC). Furthermore, pollen-jujube instant power and pollen-skincare cream were exploited. This paper consists of six chapters, including four aspects as following:1. The total phenolic contents of four different bee pollen extracts were determined and the antioxidant properties of extracts were assayed using different methods including reducing power, iron (II) chelation, DPPH radical, site-specific and nonsite-specific hydroxyl radical. The. results showed that statistically significant relationship between the total phenolic content and the reducing power assay, iron (II) chelation assay, DPPH radical assay, site-specific and nonsite-specific hydroxyl radical assay were found. Ethanolic and methanolic extracts from bee pollen showed higher antioxidant activities than water extracts. The four different bee pollen extracts performed better in the nonsite-specific assay than in the site-specific assay. Rape bee pollen extracts showed the highest scavenging activity for site-specific and nonsite-specific hydroxyl radicals.2. The rapid evaluation of antioxidative components of extracts from four different bee pollen was done by using HPLC-DPPH off-line method. The results showed the types of antioxidants in rape bee pollen extracts were more than that in the others, and the four different bee pollen extracts had antioxidative components whose retention times were between sixteen and seventeen minutes.3. The processing technology of pollen-jujube instant powder were studied. The total flavonoid, V_C, antioxidative capacity and antibacterial action of pollen-jujube instant powder were tested. The results showed the contents of V_C and total flavonoid were found to be 430.5mg/100g and 254mg/100g respectively. Pollen-jujube instant powder possessed significant DPPH radical scavenging activity and antibacterial activity against Escherichia coli and Staphylococcus aureus.4. The processing technology, pH value, thermo stability and chilling tolerance of pollen-skincare cream were determined. It showed that pH value was 6.76. Pollen-skincare cream was stable under the temperature of 40℃and -4℃, which was up to the standard.
