The cardiovascular diseases are one of the main factors that harm people's health. According to"The investigation of Chinese nutrition and health condition", which was published in August 2004 by the information bureau in State Department , more than two hundred million people were suffered by hyperlipidemia in our country in 2002. Further more the incidence rate is increasing. The Atherosclerosis(AS) is the first pathology process leading to the cardiovascular diseases. Researches had showed that Atherosclerosis (AS) caused by lipid metabolism derangement was the main factor that caused the above- mentioned cardiovascular diseases. About 90% coronary heart disease(CHD) are caused by AS, and the hyperlipidemia is the most important factor advancing AS. In recent research, the theory of oxidation-modify becomes a focus. Lipid peroxidation played important roles in the occurrence of AS diseases. According to research results, the main reason was that lipid peroxidation reaction could cause contraction of endothelial cell and injury of cyto-architecture (especially biomembrane system). At the same time, the production of lipid peroxide made lipid component of cell membrane changed, and induced degeneration of cell intramembrane enzyme and protein, then resulted in the destruction of cyto-architecture and cell's function. Therefore, the research on the harmful effects of lipid peroxidation attracts people attention gradually. In the regulated course of lipid metabolism, some biological active components have important effects. Among of these active components the function of momordica charantia L and soybean isoflavone had raised great interest of nutriology scholars.Momordica charantia is the fruit of cucurbitaceous plants, which is not only for eating but for pharmacy use. It has many kinds of vitamins and microelements. In recent years, many ingredient were distilled such as saponin,protein, alkaloid, sterid and so on.
