There is now a consensus that atherosclerosis represents a state of heightened oxidative stress, Oxidative stress induced by ROS is considered to be an important part in the etiology of atherosclerosis. Dring the pathological course of forming and developing of atherosclerosis, ROS oxidate and modify the oxidated low density lipidprotein, and promote the formation of foam cells ;In addition, lipid peroxidation mediated by ROS can damage endothelium and results in endothelial dysfunction, which promote the initiating and developing of atherosclerosis. Endothelial dysfunction have an important role from the initiation of fatty streak to plaque lesion progress in atherosclerosis, it is the early pathological change of atherosclerosis, and lipid peroxidation injure may be one of the initiating factors of endothelium injure. Therefore, antioxidants should benefit to the prevention and treatment of atherosclerosis by holding back oxidative stress damages.Numerous epidemiologic studies have shown that intake of lycopene from tomato products was inversely related to the risky of coronary heart diseases, and low serum levels of lycopene were associated with an increased risk of myocardial infarction and stroke. However little is known about its mechanisms of prevention and treatment of CAD. Lycopene was a good antioxidant, prevention of oxidative stress damages may be a access to preventing atherosclerosis.
