Endothelial dysfunction have an important role from the initiation of fatty streak to plaque lesion progress in atherosclerosis, it is the early pathological change of atherosclerosis, and lipid peroxidation injure may be one of the initiating factors of endothelium injure. Therefore, antioxidants should benefit to the prevention and treatment of atherosclerosis by holding back oxidative stress damages.Numerous epidemiologic studies have shown that intake of lycopene from tomato products was inversely related to the risky of coronary heart diseases, and low serum levels of lycopene were associated with an increased risk of myocardial infarction and stroke.
