In this paper, Spring and Autumn royal jelly as raw materials, the spray-desiccation technics and freeze-desiccation technics for preparing royal jelly powder were compared and studied. The results were summarized as follow:(1)Before orthogonal experiment, pre-test of single factor was done for factor level. The formula was considered in the yield, solubility, acidity and water content for the best formula of royal jelly powder. The best formula of spring royal jelly was maltodexrin(12.5%),β-cyclodextrin(7%), arabicg um(0.5%), royal jelly concentration(30%); the best formula of autumn royal jelly was maltodexrin(12.5%),β-cyclodextrin(5%), arabic gum(1.5%), royal jelly concentration(30%).(2)Before orthogonal experiment, pre-test of single factor was done for factor level. Parameters of spray-desiccation technics were considered in the yield, solubility, acidity and water content. The best technics parameters of spring royal jelly were inlet temperature(175℃), the injection volume (40%), air flow index (600 L/h); the best technics parameters of autumn royal jelly were inlet temperature(175℃) , the injection volume (20%), air flow index (600 L/h).(3) According to the analysis of the index charts, the differences between the spray- desiccation and freeze-desiccation royal jelly powder were as follows:the spray-desiccation powder had low water content, low solubility, high values of superoxide dismutase,high sensoryscores. However,the differences of the acidity and 10-HDA were not significant. As the freeze-desiccation cycle was length than the spray-drying and consumed more energy, considering all the facters above, the spray-desiccation can be seen have more advantages over freeze-desiccation.
