Study On The Process Quality Evaluatin Of Xinjiang Grape And Basis Database Establish

To Solve the prominent problem of lacking the processing special-purpose variety and the high quality raw materials base, in the paper Xinjiang grapes were taked as the object of study, the two different use's grape processing quality evaluating indicator system were established, the grape processing characteristics and the processing suitability were researched by means of the multivariate statistical analysis methods. Xinjiang grape processing quality foundation database system was established by means of the ASP dynamic homepage technology in the foundation of the B/S pattern's three architecture. The results were as follows:1. Establish quality point scale of the grape sense organ, we have carried on the sensory analysis to the Xinjiang 45 kind of different grapes, finally indicated The result indicates noble concubine the Special Early,Red Flag,Flame Seedless,Early Muscat,Early Yan,Early Clove,Caramel,Mei LuZhe 6 varieties, in the cob contour, the fruit grain heavy, the luster, the fruit texture, the berry flavor, the smell and fell in grain of rate target grading to amount to 100 points, had the high quality sense organ quality. The content of protein, Vitamin C, soluble solid, Fe and Zn in Zaoyan was highest, were 1.19%, 0.11%, 29%, 0.221%, 0.008%. Five kinds of grape's amino acid AAS values and the CS value were smaller than 1. The threonine content was most, the content of the others were similar, the total quantity of essential amino acids was 35%~50% in the total amino acid content. Cluster analysis and princilal component analysis results.2. After having carried on the grape processing quality and the grape various qualities evaluating indicator relevant analysis, the biggest effected 5 processing quality target were screened to the wine-making grape quality: fruit shape (particle size), flavor, titratable acid, soluble solid, Vitamin C.The biggest effected 5 quality target to the fresh food grape were fruit shape (particle size), soluble solid, protein, juice rate and flavor.3. Integrated Princial component analysis,constructed using the variance contribution of integrated quality grape forecast model, the principal component scored from the comprehensive scoring formula to calculate the 19 wine grape varietied and 26 kinds of table grapes in the principal component scores and integrated principal component scores, the higher the composite score, indicating better quality of the integrated variety. The results shoe that the value of wine grape in the top five principal components are integrated Cabernet Sauvignon, Chardonnay, Riesling, Merlot, Pinot Noir, table grape principal component is the integrated value of the top five Early Yan, Early Muscat, Flame Seedless, early lilac, red special early.To Using principal component analysis and cluster analysis method the quality evaluation factor,the establishment of Xinjiang wine and grape quality evaluation criteria.The 19 kinds of wine grapes and 26 kinds of table grapes after a comprehensive evaluation of its suitability and classified.And an integrated principal component analysis confirmed the results of the classification.4. The grape processing quality database system based on the Web was developed in the foundation of B/S pattern's three architecture and by means of the ASP dynamic homepage technology. In the system,the sense organ quality, the physics and chemistry nutritional quality, the processing quality data of Xinjiang grape varieties were widely understood, simultaneously the necessary project types were increased through the system manager, like the processing serviceability, the grape base's detailed information, the climatic conditions information and so on .
