| This paper aimed at the problem that domestic beef grading technology dropped behind.Compared the experience in successful development of abroad meat industry and the fact of development of domestic meat industry,this paper reseached the precision and applicability of beef image grading device introduced to improve domestic beef grading technologyThis paper was divided into four parts.Firstly,the basic principle and operation method of CSB-FuzzyMeater were investigated,including main hardwares of CSB-FuzzyMeater and their basic principles,the work flow of grading software program and ERP program,the segmentation flow about back cut,the work flow about grading striploins and ribeyes.The result of this reseach indicated that CSB-FuzzyMeater was mainly made up of an industrial computer,a camera,an electronic scale and other compatible fittings,CSB-FuzzyMeater was a part of this enterprise management system and was mainly used to grade back cuts and manage information of cut products.Compared CSB-FuzzyMeater with Hot Assessment System and Chiller Assessment System, CSB-FuzzyMeater more faced to final cut products.The second part included three experiments.Precision of detecting beef marbling, effect of different positions on detected beef marbling quantity,effect of restraining glistens from transverse sections of ribeyes on marbling quantity detected were reseached respectively.Results of these reseachs indicated that the system errors of CSB-FuzzyMeater affected identically on different striploin groups,there was no significant difference (p>0.05),precision of detecting beef marbling quantity was better.Factor of position could affect marbling quantities which could vary with position dots,marbling quantity was the lowest at the middle position,marbling quantity ascended gradually from the middle position to two sides.Results of this experiment indicated glistens from transverse sections of ribeye could affect marbling quantities detected by CSB-FuzzyMeater.Roughness of transverse sections of ribeye was ultimate reason why ransverse sections of ribeye could generate glistens,luminance could affect grading results detected by FuzzyMeater via roughness of transverse sections of ribeye.Further research should be made to develop effective methods which can eliminate glistens and improve veracity of grading results.In the third part,firstly stiploin grading criterion used by CSB-FuzzyMeater was reseached.The results indicated that stiploin grading criterion used by CSB-FuzzyMeater was likely to consult weight and marbling quantity,then the consistency of CSB-Fuzzy-Meater grading and manual grading was reseached.416 striploin cuts were graded in this experiment,the result indicated that the consistency of CSB-FuzzyMeater grading and manual grading Was 0.7284.The forth part investigated character of transverse sections of ribeye of striploins from 618 cattles in this corporation.Result of this investigation indicated the percentage of different grades differ greatly,from grade F to grade SS percentage of striploins descended gradually.The proportion of grade F striploins was the highest,it was 47.53%.The proportion of grade SS striploins was the lowest,it was 0.68%.According to beef quality grading criterion of China,most of marbling areas of striploins did not reach grade 'Small' and marbling area proportions of most of striploins reached grade 3 and did not reach grade 3.This investigation indicated that the whole loin-eye areas of cattles accorded with normal distribution,the average loin-eye area of cattles was 60.71±12.033cm~2.The proportion of loin-eye areas which distribute between 50cm~2 and 70 cm~2 was the highest(the percentage was 61.69%),and the whole average thickness of back fat of grade A,B,S,SS striploins of cattles accorded with normal distribution,The proportion of whole average thickness of back fat which were between 0.28cm to 0.85cm was the highest(the percentage was 82.28%). |
