Study On Bagged Fruit Of Gala Apple's Physiological Properties During Storage

In this paper, Bagged"Gala"apple, unbagged apple and effects of 1-MCP were studied on respiration, ethylene production, weight loss ratio, flesh firmness, soluble solids, titratable acids, total soluble sugar, anthocyanin content, chlorophyll content, relstive membrane permeability, MDA and SOD, POD,CAT, PPO, PG activity. The qualities and related enzyme activity during ripening and senescence process of bagged"Gala"apple and effects of 1-MCP on storage were discussed, in order to provded theoretical bases for bagged"Gala"apple storing.The results of study showed as follows:(1) During cold storage,bagged"Gala"apple reached respiratory and ethylene peak more earlier and weight loss ratio over than CK. The soluble solids, total soluble sugar were lower and reduction extent of titratable acids and anthocyanin content slightly higher than CK. The results showed that bagged ftuit more easily to ripening and senescence.(2) During Room Temperature, The bagged"Gala"apple reached respiratory and ethylene peak at 24d as well as CK. Weight loss ratio were higer than CK before 12d and lower after; The disease index and decay of bagged"Gala"apple also lower and flesh firmness beyond CK. There is no difference between them of soluble solids, total soluble sugar and chlorophyll content. These results implied that bagging reduce the disease of fruit and helpful to improving its storage stability.(3) There were no significant difference in relstive membrane permeability and MDA of bagged"Gala". The activity of POD, CAT of bagged apple and CK were double peak curve. Probably, the CK has lager disease index and decay and damage of cell membrane system at last, so bagged"Gala"apple was lower than CK of POD, CAT and SOD activities.(4) The 1-MCP significantly inhibited the respiration and ethylene production, slowed down the decrease in the flesh firmness, anthocyanin content and titratable acids and rise of weight loss ratio, relstive membrane permeability, MDA. But it is did not affect the soluble solids and total soluble sugar.(5) 1-MCP affect the activity of POD, CAT that was up and then down at room temperature and the SOD activity higher than bagged"Gala"apple during first 9d. As ending the SOD, PPO activities were lower than others, the relstive membrane permeability and MDA lower, too. We conclude that 1-MCP could slow down the damage of cell membrane system and senility of fruit.
