With the development of economy, people pay more attention to their health. Thus, many diseases caused by lack of elements have been found out and paid attention to, among which disease due to lack of iodine has been a serious problem all over the world. With some kinds of vegetables chosen as research objects, we tried to use chemical methods to find out the distribution mechanism of iodine in vegetable cells from a view of both macroscopic and microcosmic points. The experiments are designed to apply spectropHotometer to measure the iodine content of vegetables, using TEM to observe the distribution of iodine in the vegetables cell and the existence of AgI and applying the ICP-MS to count the iodine content of vegetables cell. A series of experiments are designed to observe the variations of iodine during the overall culture period, from which analysis of iodine's distribution in different apparatuses and even in various cells could be done, thus the relationship between the vegetable's enrichment effect on iodine and the iodine concentration in soil could generally be discovered. As foundation to the further study on vegetable's enrichment effect on iodine, the research could help find out such as the enhancement on enrichment ability and selection of better species rich in iodine. It also can provide botanical evidence in curing the disease due to iodine difficiency, as well as references of iodine in other medical applications.The conclusions obtained are stated as follows:a) The iodine in the apparatus increases as a function of iodine addition in the soil. The content of iodine in the vegetables is root > leaf > steam.b) In same conditions, with one kind of vegetable, enrichment of iodine is more effective by applying patent iodid fertilizer than by applying KI, i.e., patent iodid fertilizer is more easily to absorb iodine than KI.c) In same conditions, enrichment of iodine in different varieties of vegetables is different. It's evident that after applying KI and patent iodid fertilizer, the enrichment capability of leaf vegetable is stronger than cauline vegetable.d) From the microcosmic distribution of iodine in vegetable cells, it can be found that iodine mainly enriched in cell organ, with a little portion distributing in cell wall and in cytoplasm.e) In the hydroponic experiment, As AgI is easy to decompose in the presence of short-wave light and iodine is a kind of volatile element, the residual of iodine is far less than Ag.f) The distribution of iodine in the subcell shows that iodine are mainly present in cell organs accounting for 54.75%-63.95%, and about 16.28%—23.75% distributes in the other part.
