Chinese -handed crab is delicious and nourishing which belongs to the top class among aquatic products. The industry of Chinese -handed crab culturing and proliferation has becoming the stanchion industry through several decades' development. The nutrition quality has got more attention with this industry developing. The paper studies the edible part of Chinese mitten-handed crab from different proliferation and culturing water. Several indexes have been considerate which including the measurement indexes (the liver index, gonad index, muscle index, edible part index, ratio of liver and gonad), the nutrition indexes (crude protein, crude fat, moisture, amino acids, fatty acids, mineral elements, et al) so as to offer the basic data of optimizing culture mode as well as establishing the quality standard and quality identify index.The results show that apart from the muscle index and edible part index(P>0.05), other parameters have significant differences (P<0.05) among the different proliferation and culturing water male crab. These indicates the effect of different proliferation and culturing water to the spermary development. For the female crab, there are significant differences (P<0.05) in muscle index,edible pare index and gonad index in different proliferation and culturing water, among which the lake net-enclosure mode is the highest. As far as the male and female crab are concerned, the female crab's parameters of the gonad index ,liver index,ratio of gonad and liver are higher than male crab. The edible part index is less lower than the male (P>0.05) . That is the improving of gonad index can mainly be get from liver transforming as well as muscle transforming.The culturing mode (lake net-enclosure,pond culture) crude protein is high than proliferation mode(lake releasing,Changjiang wild), which is the same as the male crab's crude fat. And for the female crab, the crude fat shows that lake net-enclosure and lake releasing mode is higher than pond culturing mode, and the Changjiang wild mode is the lowest. From above, we know that no matter the crude protein or the crude fat, the numerical value of lake releasing mode is the highest. From the point of nutrition, the modes of pond culturing and lake releasing crab are comparatively better which have the character of same level protein and lower crude fat.The nutrition indexes (total amino acids,essential amino acids,delicious amino acids, ratio of essential amino acids of total amino acids, ratio of essential amino acids of non-essential amino acids)has no significant different among the four groups, but there has significant different between female and male crab with the same indexes. The female crab's proportion of essential amino-acids compared with human being is better than male crab. From above we get the conclusion that the female crab's nutrition quality is better than male.
