Chick embryo is fertilized chicken egg which hatchs under certain temperature conditions, the embryo continue growth and form a new life, but the egg has not broken shell. Chick Embryo is nutrient-rich and delicious which contain many essential nutrients and has high health value."Compendium of Materia Medica"record:"chicken egg has the function on treating headache, migraine, Head leprosy and Limbs crazy dysentery, weak old man and children eat it regularly could make spleen and stomach health, then it could achieve the effect of physical fitness".In order to discuss the changes of main nutrition in the chick embryo during incubation of chick embryo egg and develop nutrient-rich and comprehensive effectiveness capsules based on the changes of nutrient, changes of several major nutrients such as Moisture, ash, fat, cholesterol, protein, sugar, calcium, iron, zinc, phosphorus, vitamin A, vitamin E and taurine were studied during the development of Highland Brown laying hens embryo egg. The results were as follows:1. The chages of major nutrients in chick embryo egg with the increase in the days of incubation were as follows: The content of moisture, total sugar, fat, cholesterol wereradually reduction.The content of protein, iron, zinc, phosphorus and taurine increased largely during the first stage(1~15days) and kept unchange during the secede stage(16~21days). The content of vitamin E and vitamin A increased largely during the first stage(1~12days) and kept unchange during the secede stage during the secede stage(13~21days).2. As the increase in the days of incubation, the content of moisture decreased by almost 4.6%, total sugar reduced by 32%, fat reduced by 90%, cholesterol reduced about 65%.3. Comparison of the nutrient between Chick embryo and unhatched chick embryo: the content of ash increased 0.7%, protein increased by 60%, calcium increased about 5 times, iron increased about 50%, zinc increased by 33%, phosphorus increased by 83%, vitamin E increased 100 times, vitamin A increased 1 times, taurine increased 6 times.4. According to the changes of nutrition and health components in the chick embryo incubation, appropriate-age chick embryo was used to process chicken health capsules by freeze-drying technology. The advantage of the chicken health capsule was low fat and cholesterol, rich in protein, vitamin A, vitamin E, taurine, iron, zinc and calcium. It could enhance body, stay caducity and carry easily. The chicken health capsule was a natural green health product which was suitable to persons in middle and old age.5. In accordance with national health standards, embryo health capsules were detected. The detection contain colony-Forming Units, coliform bacteria and Salmonella. The result of microbiological indicators of embryo health capsule: during 1g embryo health capsule the CFU<1×10;Coliform MPN<3;salmonella was not detected. The results meet the demand of the microbiological standards of poultry and eggs.
