Agrocybe Chashugu (Agrocybe aegerita),with particular flavor,is a natural edible fungi,which has nutrition function and healthy protection function.Lately year,with the change of people's consumption idea,the market demand of fresh Agrocybe Chashugu enhanced gradually.Due to the post-harvest problems during preservation,such as cap opening,water loss,cellulose lignification and autolysis,it is difficult for Agrocybe Chashugu to preserve and transit at the ordinary condition.Therefore,this paper systematically discussed the autolysis theory and vacuum pre-cooling technology of Agrocybe Chashugu,which provides the possible mechanism for the Agrocybe Chashugu preservation technology and theory.The research content and the results were as follows:1,study on the vacuum cold technology and storage temperature of Agrocybe ChashuguThe paper studied the influence of pre-cooling ending temperature,wetting quantity and storage temperature on the storage of Agrocybe Chashugu and the weightlessness rate,amino acids,respiration intensity were used as measure index,the final results showed that the pre-cooling ending temperature 4℃,wetting quantity 5%,storage temperature 3℃.On the basis of the single factor experiments,the response surface analysis methodology was used to optimize the process parameters of the vacuum pre-cooling of Agrocybe Chashugu,After taking comprehensively account of the importance of various index,convenience of operation and the production cost,the optimal parameters combination of vacuum pre-cooling and storage temperature of Agrocybe Chashugu could be achieved as follows:the pre-cooling ending temperature 4℃,wetting quantity 3.72%,storage temperature 2℃.2,Study on the effect of microbes on the autolysis of Agrocybe ChashuguThe effect of microbes on the autolysis of Agrocybe chashugu was studied in this paper.Through the experiment of inoculation,it could be concluded that the autolysis of Agrocybe Chashugu was not caused by microbes,but after autolysis of Agrocybe Chashugu the tissue structure was damaged , which induced the growth of microorganism and accelerated the autolysis process of Agrocybe Chashugu.3,Study on the effect of senescence on Agrocybe Chashugu autolysisThe effect of senescence on Agrocybe Chashugu autolysis was discussed in the article.The results showed that the membrane permeability,CX,MDA,superoxide (O2-·) were significantly increased;the hardness,protein content,the original pectin,CAT,weightlessness demonstrated the trend of decline;while the protease, pectinase,PG,SOD,POD,PPO,cellulose appear first increased and then decreased trend with the process of Agrocybe Chashugu autolysis.The conclusion could be made that there existed imitate relationship between the autolysis and senescence of Agrocybe Chashugu by variance analysis.Agrocybe Chashugu autolysis was caused by the reaction of enzyme and the protease,PG and Cx were the key enzyme in the process of autolysis of Agrocybe Chashugu.4,Study on the effect of the gas composition(oxygen content) of the storage environment on the autolysis of Agrocybe ChashuguThe effect of the gas composition(oxygen content) of the storage environment on the autolysis of Agrocybe Chashugu was researched in this paper.The results showed that the autolysis indices,cell membrane permeability,the protein content and protease,pectin content and pectinase,cellulose content and cellulose enzyme(PG) of Agrocybe Chashugu existed significant difference between the gas adjustment packaging and common packaging.There also existed significant differences between D (80% O2) processing and C (20 percent O2),E (90% O2) processing.Excepting for the autolysis index there were not significant differences between D (80% O2) and A (whole N2),B(10% O2).It could be known that appropriate high O2 (80% O2) and low O2 (0% 10% O2) could effectively delay the autolysis of Agrocybe Chashugu. 5,Study on the effect of storage temperature on the autolysis of Agrocybe Chashugu The effect of storage temperature at 5℃,10℃and 15℃on the autolysis of Agrocybe Chashugu was studied in the paper.The results showed that: the influence of temperature on the autolysis index,the protein content and protease,pectin content and pectinase,cellulose content and cellulose enzyme were reached significant difference,the proper low temperature was beneficial to delay the process of autolysis and extend the fresh-keeping time of Agrocybe Chashugu.6,Study on the effect of vacuum pre-cooling on the autolysis of Agrocybe ChashuguCompared the Agrocybe Chashugu which conducted at the optimal vacuum pre-cooling condition(pre-cooling ending temperature 4℃,wetting content 3.72%) with the blank group(unprocessed by vacuum pre-cooling),the both were stored at 2℃and the results showed that the autolysis index,protein content and protease,pectin content and pectinase,cellulose content and cellulose enzyme were significant difference in statistics.Vacuum pre-cooling processing could wipe out the field hot of Agrocybe Chashugu and extended the storage period.
