Based on such testing factors as weight loss, rigidity ,PPO activity, respiratoryintensity and degree of browning ,the optimum controlled atmosphere storage conditionof Agaricus bisporus and the influence of controlled atmosphere storage to the postharvestphysiology and nutrient component are studied in this paper, which provides the theoreticalproofs for the storage of Agaricus bisporus.The influence of controlled atmosphere storage system parameters such astemperature, relative humidity, concentration of O2 and concentration of CO2 to the qualityof the storage of Agaricus bisporus are studied. The mathematical models of controlledatmosphere storage of Agaricus bisporus system are constructed by studying the browningdegree of epidermis ,the browning degree of gill and membrane penetrable in the storage.Thus it gives scientific theoretical basis to the design and the option of the parameters forthe controlled atmosphere storage system.Controlled atmosphere storage of Agaricus bisporus system was design by the methodof the quadratic orthogonal rotating combination design of three factors and five levels. Itwas studied the influence of temperature, relative humidity, concentration of O2 andconcentration of CO2 to the browning degree of epidermis, the browning degree of gill andmembrane penetrable. The experimential findings are analyzed by Reda software and theregression equations are obtained. It was given the range of system parameters byfrequence optimization and gottten the optimum parameters value.The influence of controlled atmosphere storage to weight loss, rigidity, PPO activity,respiratory intensity, degree of browning and membrane penetrable are given by optimumparameters, and the influence mechanism of the controlled atmosphere storage is alsoobtained. Meanwhile, it is elicited that the nutrition component of Agaricus bisporus variedwith the controlled atmosphere storage by analysing the change of protein, polysaccharideand amino acid.
