Prunus cv.atropurpure Jacg and Prunus persica cv.atropurea-plena was at present widely used in the city, the scenery botanical garden and the highway planting, the collection view leaf, the view flower, the view fruit finely watched the fruit tree in a body. At present studied mainly concentrates in the cultivation study aspect, but were really few to its flowered pigment research. As one kind of natural pigment resources, but widely applied in profession and so on food, drugd manufacture and cosmetics, therefore had the vital significance regarding its research.The materials of the experiment was Purple Ye Li and Purple Ye prunus persica, carries on from April to November in 2005 in the Langfang Run Lu science and technology limited company. Mainly carries on the photosynthesis the daily variation and the annual variation situation and the leaf blade pigment related characteristic, and withdraws, aspect and so on stability to its pigment studies. The chief results as follows:1.The leaf photosynthesis characteristic research indicated that, the leaf net photosynthetic rate daily variation several for the model noon reducing split-blip curve, the high point appeard about 10 AM, about 15 o'clock appeard another peak in the afternoon, but this time peak value was small. The seasonal variation also assumed the split-blip curve, in May, in June photosynthesizes the ability to be strongest, afterwards dropd, in September the temperature dropd, net photosynthetic rate also to have the rise, appeard another peak. The purple Ye prunus persica light saturation point(LSP)probably for was about 1,400μmol·m-2·s-1, the light compensates(LCP)in 50 - 75μmol·m-2·s-1. Purple Ye Lilight saturation point about 1,600μmol·m-2·s-1, the light compensates in 50 -2.Had carried on the determination to in Prunus cv.atropurpurea Jacg and Prunus persica cv.artopurea-plen leaf pigment, finally indicated, Prunus cv.atropurpurea and Prunus persica cv.aropurea-plena leaf photosynthetic pigmentcontent to be highest for the summer. The autumn was spring somewhat low. the chlorophyll a content of Prunus cv.atropurpurea Jacg in elevates continuously from April to August, dropd after August, but the Prunus persica cv.aropurea-plena was highest in August, afterwards the content reduced quite quickly. But regarding chlorophyll b, Prunus cv.atropurpurea Jacg thecontent was from July to September highest but changed not not obviously, the Prunus persica cv.aropurea-plena had a peak in August, in September, October, Novembercontent drop tendency change quite was fierce.Anthocyanins content annual variation situation, in spring not the beginning of summer April, May and in September anthocyanins content high, leaf colorful, watched the effect to be good, but at high temperature glare,In July and August, under Anthocyanins content. Prunus cv.atropurpurea Jacg changed the depth in the autumn leaf color. The change tendency of the chlorophyll and anthocyanins was opposite.3.The leaf dissection structure research indicated that, the leaf dissection structure and the photosynthes was speed have the certain relations.4.The linearity regression analysis indicated, the leaf Anthocyanins content if only photosynthesizes the speed to become the linear relations, the linear relations quite was remarkable. May through strengthen the cultivation management, the enhancement leaf photosynthesis ability, thus may enhance the leaf anthocyanins the content, enhanced the effect of enjoyment.5.Through the model color reaction experiment, the solable experiment as well as the visible spectrum scanning data analysis, obtaind this pigment to belong to anthocyanins class pigment.6.Withdrew in the process from the processing use angle to its anthocyanins several important questions to conduct the research. The orthogonal experiment analysis indicated that, Soaks proposes the temperature and soaks proposes the number of times affects the primary factor which the pigment withdraws, but soaks proposes the time and the material fluid compared to was the secondary factor.7.The anthocyanins investigation into stability indicated that, pH value to pigment influence obvious, 80°C within quite is stable. The illumination can speed up the pigment degeneration. Metallic ion K+> Na\ Ca2\ Zn2+> Mg2\ Mn2\ Al3+ did not have the influence to the pigment luster. But Cu2+n F e2\ Fe3\ Sn2+ had not good affects. The pigment anti- oxidized ability missed, beard the return to original state performance in the certain density scope to be good. Chemical additive and so on sucrose, Portuguese glucose, citric acid, antiseptic and salt did not have the influence to the pigment.
