Fresh flesh and dried flesh of 11 kinds of longan were used as materials to analyze physiological active substances including adenosine, adenine, uridine, SOD etc, which have obvious pharmacological effects. Quantification of adenine, uridine, and SOD of longan flesh was done by HPLC to compare the content of adenine, uridine, SOD in different kind of longan. Following process characters were analyzed: soluble solids, sugar, acid, Vc, POD, and PPO, those all relate in browning of fresh longan flesh. Physiological active substances were extracted from traditional ignorant dried-longan and some experiments done on animals. The main results are as follows:1 .It was the first time to analyze the content of adenosine, adenine, and uridine of longan flesh and compared the content of primary varieties and familiar varieties in Guangdong, Fujian, and Sichuan. Component was extracted for 15 min by ultrasonic in room temperature and water was used as solvent. Gushan-2 has highest content of adenosine (50.93μg/g fresh weight) and adenine (7.0645μg/g fresh weight). Fengliduo has the highest content of uridine (127.0985μg/g fresh weight).2. When extracting substances from fresh longan flesh by ultrasonic, the efficiency of different solvent was water > methanol > ethanol. Separate wavelength was 254μm and mobile phase was 0.01lmol/L KH2PO4: acetonitrile (92:8). Analysis was done by HPLC to measure content of adenosine, adenine, and uridine.3. Longan flesh was extracted with ethanol and methanol; Rb1 and Rg1 in extracted substances were analyzed. Results proved that longan flesh had no Rb1 and Rg1.4. Physiological active substances from dried-longan were tested on animals with both water and ethanol extracts. It is discovered that the substances extracted from dried longan by water and ethanol can improve the ability of learning and memory of trial mouse. It is proved that longan flesh can improve the function of intelligence.5. Nutrition including soluble solids, sugar, acid, Vc, POD, and PPO from different kind of longan flesh were analyzed. Shixia, Chuliang, and Gushan-2 were suitable for juice processing and the content of acid was more than 0.1g/ 100ml. Shuinan-1, 96106, and Wulongling were not ideal as juice processing and the content of acid was less than 0.06g/100ml. Fudi had the highest SOD activity (3.8448μ/mg/min). Shuguan had the highest content of Vc (89.567mg/100ml). Shuinan-1 had the highest POD and PPD activity (18.686μ/mg/min and 7.36μ/mg/min). Its flesh was easy browning.
