The major cultivars of peach fruit in Beijing,such as "fengbai" and "bayuecui".were materials of this experiment. The thesis studied the effect of physiological reaction and quality on peaches which had treated with calcium,manganese,calcium and manganese at the storage temperature of 15±1 ℃ and 2±1℃ .The results showed as following: calcium,manganese,calcium and manganese treatments could apparently decreased respiratory rate,ethylene production,resisted the appearance of peak.Delay decrepitude and ripe of peach fruit.The calcium,calcium and manganese could increased the activity of SOD,POD and CAT,decreased the O2- production rate and accumulation of H2O2. At the same time ,manganese treatment also increased the activity of SOD and POD,so it could reduced the injury of O2-. and H2O2 on the peach fruit,but it restrain the activity of CAT ,and accumulated the content of H2O2.The calcium, calcium and manganese treatments bated the activity of PPO and decreased hydroxybenzend content,reduced the incidence of fruit decay and brown.Although the manganese treatment could not resist PPO activity obviously,decreased the contend of total hydroxybenzene,thus reduced the incidence of fruit rot and brown.The different treatment slowed the decrease of firmness and contents of total soluble solid,titratable acid and Vc,improved flavor color and sense quality on peaches during storage period.The results showed that calcium,manganese,calcium and manganese treatment and low temperature (2±1 ℃) had marked effect.
