At present, the pollution of Organo- phosphate pesticides on vegetables was still serious. So it was essential to examine the pesticides remnant in vegetables before eaten. Methamidophos was one kind of Organo- phosphate pesticides. It has an obvious effect on preventing and curing the vegetable diseases, however, the pesticides remnant in vegetables was very harmful to the body by increasing the content of reactive oxygen species. In this paper, the content of soluble protein, Vitamin C and ROS and the activity of SOD, GSH, GST, CAT, GPX, Mg2+-ATPase, Ca2+-ATPase and total anti-oxygen capacity in Chinese cabbage were determined in the following 7 days after sprayed by 75g/mu Methamidophos. The results indicated that the content of all parameters didn't change obviously in the first day. In the 2-6day, the content of protein, and the activity of GSH, SOD and CAT in Chinese cabbage were higher than the control, but the content of GPX and GST were relatively lower. At the 7 day, all parameters revived to the level of control sample. Whereas, the activity of Mg2+-ATPase and Ca2+-ATPase had no significant difference between the samples and the controls. In 5,6 days the activity of all enzymes along with soluble proteins turned a little higher than that of the controls. In 1,5,6 days the contents of ASA in Chinese cabbage were dropped a little, and in other days no obvious changes were detected. In 1-4 days, the contents of reactive oxygen species and the total anti-oxygen capacity in the sample Chinese cabbage were increased. It was higher than that of the control groups. In 5 day, the total anti-oxygen capacity in the sample groups was decreased obviously. In the following days, the changes of all the materials were similar. The results demonstrated that treated by Methamidophos, the antioxidant compounds of Chinese cabbage were induced to withstand the toxicity of Methamidophos.
