The study on improving nutritive value of water spinach using their luxury Zn absorption was introduced in this article. It included the Zn and Fe contents in the edible plant parts of water spinach, Soluble protein and sugar content and so on, and studied the yield of water spinach, the relation of CA, POD and SOD activities and MDA content with Zn, human health and luxury absorption and so on. The water spinach was used as the Zn carrying agents to make up the Zn lack in food. It was beneficial to human health.The effect of improving nutritive value of water spinach using their luxury Zn absorption was studied passing the measures of base Zn fertilizer, spray Zn fertilizer and using 1.5 dose N with the different levels. The result showed thatwith proper Zn fertilizer (1.0 kg/667m base Zn fertilizer + 0.10% spray Zn fertilizer + 1.5 dose N ) it was beneficial to promote growing of water spinach, to improve the yield and quality of the plant, and was more beneficial to accumulate Zn in the water spinach.1. It was on an appropriate Zn level that both base Zn fertilizer and base Zn fertilizer cooperating with foliar spray of Zn could stimulate the CA activity, the growth of water spinach plant and increase the photosynthetic rate in water spinach leaves. The No. 16 treatment ( 1.0 ~ 2.0 kg/667m2 base Zn fertilizer, 0.10% spray Zn fertilizer ) recorded the highest CA activity which yield was 95.37 % higher than that of the control. The No.5 ( 4.0 kg/667m2 base Zn fertilizer ) and No. 14 ( 4.0 kg/667m2 base Zn fertilizer + 0.10% spray Zn fertilizer) treatments recorded the low CA activity and their yields were 13.4 % and 21.2% lower as compared with that of the control respectively. The difference were significant and the treaments did not caused Zn poisoning.2. The Zn content in plants increased gradually with the Zn concentration of fertilizer being added. The No.5 and No. 14 treatments accumulated the high Zn content which were 1229.6% and 1247.7% higher than that of the control respectively. It should arouse our concern that the Zn content in plant was not increased on proportion with the supply of Zn fertilizer. The result showed that the uptake of Zn by water spinach plant was limited. The treatments with proper N fertilizer could increase the Zn contents in plants, the highest accumulation could reach 18 time, but the range of increase of Zn contents in plants decreased gradually with the increasing of Zn fertilizer.3. On 0 ~ 1.0 kg/667m fertilizer level, the Fe content increased with base Zn fertilizer being added to use, the P content was higher than the control; the Fe content began to decrease while base Zn fertilizer being added to the 1.0kg/667m2 level, but it still was higher than that of the control, however the P content was lower than that of the control after the 1.0 kg/667m2 level. The K content was not influenced with the Zn fertilizer.4. The varies of soluble protein content, soluble sugar content, POD and SOD activities were consistent with that of the CA activity. The vary of MDA content was opposite to the varies of those.
