The sucrose 6 acylates is the key intermediates in the preparation of sucralose which is a commonly consumed high intensity sweetener. Sucralose is a new non nutritive sweeteners, United States, Canada and many countries have already allowed for use, and China is also approved for use since July 1, 1997. So, the research of sucrose 6 acetate synthesis has broad application prospects. And biocatalysis is more prospective in polymer industry for its high efficiency, high selectivity and mild reaction conditions.The enzymatic synthesis of sucrose acetate was performed by transesterification of sucrose and vinyl acetate in organic solvent and buffer organic solvent systems. The main contributions were as follows:1,The effect of solvent on regioselectivity of acylation between sucrose and vinyl acetate using neutral protease was investigated. The initial findings showed that tetrahydrofuran/borate system is better for sucrose esters and sucrose 6 acetate. In that reaction system, 44.41 % sucrose 6 acetate was formed.2,On the basis of neutral protease esterification, the effect of solvent on regioselectivity of acylation between sucrose and vinyl acetate using acid protease was investigated. And get some comparison between acid protease and neutral protease: neutral protease is better for sucrose esters, but acid protease is better for selectivity of sucrose 6 acetate.in the acid protease system, 61.58% sucrose 6 acetate was formed.
