The paper used piteguo as raw material to studies on Nutrient ingredient analysis of piteguo and the extraction technics and biological active analysis techniqu of polysaccharide of piteguo, further enrich piteguo to the theoretical knowledge.Conclusions:1. Piteguo contains a variety of nutrients, fruits rich in water(88.20%),crude fat(1.98%),crude fiber(1.82%) and K(790μg/g). Total sugar(glucose)6.47%, total acid(malic acid) 1.05%, higher than other pear class. Although Vitamin Vc(20μg/g) and amino acid are low, kinds of amino acids and content equal, human methionine and phenylalanine necessary are higher than the Kiwi, most of the literature no tryptophan (0.15μg/g) are reported.2. Using water with ethanol precipitation to extract polysaccharides from Piteguo. The effects of different factors on polysaccharides extraction were investigated by single-factor experiments and orthogonal experiments as the extraction rate of polysaccharides as the examinable index. The optimal technological parameters of extracting polysaccharides are as follows:the extraction temperature, the solid-liquid ratio and ethanol concentration are 95℃, 1:2,67%. Under this condition, the extraction rate of polysaccharides in Piteguo was 1.05%.3. In the purification of piteguo polysaccharide process, Severage is used to remove of protein. When the chloroform and butanol volume ratio is 5:1, the effect of removing protein is best and 37.65% of the protein may be off. While minimal impact on the concentration of polysaccharide, the loss rate of polysaccharide is 5.85%. Activated Carbon is the most common bleaching method, and the use of the method is under mild conditions.So single factor experiments and orthogonal test is used for the process optimization. The results are as follows:when the carbon content 0.01g, time 10 min, temperature 10℃, the decolorization rate is 28.28%.4. In the research activity in the process of piteguo polysaccharide, using phenanthroline method of hydroxyl radical scavenging rate; and the use of pyrogallol autoxidation method, determination of superoxide anion radical scavenging. The results are as follows:although piteguo polysaccharide hydroxyl radicals and superoxide anion radical has a clear role, the clear effect is different. When the sugar solution is 4mg/ml, the effect on hydroxyl radical scavenging is good; when the sugar solution is 2mg/ml, scavenging effect on superoxide anion radical is better.
