| The extraction of soluble dietary fiber(SDF)from Pear Residue by chemical method was studied in this paper and its basic component was also determined. The DF was decolored with H2O2.And its physical and chemical properties was also determined. The results show that:(1) The optimum conditions for fiber extraction were: NaOH concentration 3.06%, extraction time 2.38h, ratio of liquid to solid 9.58:1, and temperature 89.63℃. The order of various factors on extraction of SDF is: liquid-to-solid ratio>NaOH concentration>extraction time>temperature. The mathematical model of the optimum extraction process is: Y=1.78+0.5X1+0.64X2+0.46X3+2X4+0.065X1X2+0.05X1X3-0.145X1X4+0.1126X2 X3-0.1576 X2 X4+0.0926 X3 X4-1.02 X12-1.22 X22-0.78 X32-0.54 X42(2) The optimum conditions for DF decoloring were: H2O2 concentration 7%, temperature 80℃and decoloring time 3h. The order of various factors on decoloring of DF is: H2O2 concentration>time>temperature.(3) The no significant effect of temperature and pH value on the water holding capacity, oil holding capacity and swelling capacity of DF. The effect of temperature and pH value on the solubility of DF is significant.(4) SDF from Pear Residue have strong antioxidant activity, the highest scavenging for O2-·and DPPH·free radical could be as high as 41.32% and 60.28%, respectively. |
