In modern milling process, flour enterprises with different product construction of wheat flour will choose different producing way for special flour. The kind of way doesn't only attain the quality characteristics request of special flour, but also making the best use of everything and earning more profitses for flour enterprises. In the flour milling process of flour plant, we analyse the quality characteristics of wheat flour from each milling systems in order to research and develop special flour. There is the stronger guidance meaning about the paper. It doesn't only offer some thinking of producing special flour for flour enterprises, but also offer some suggestion of producing special flour to solve communication problem from production and research. At last, the paper provides the theoretical basis to producing and researching special flour.It's well known that there is different quality characteristics for different special flour. It's obviously trend more and more special flour only can be used on special production-line for flour food industry. So, in order to attain the special customer's request, we must know and study the quality characteristics of wheat flour from each milling systems. According to the characteristics of special flour, we select different milling systems to blend flour on line.In the paper we select a batch of bread flour milling processes that is typical project for flour enterprises to study. It's important to analyse the quality characteristics of wheat flour from each milling systems. We analyse the baking characteristics of flour from each milling systems. The SAS system was used as the statistics tool for experimental data, including orrelation analysis and principle component analysis. We draw some conclusions of the best blending flour project on line to produce some special flour and some quality characteristics, for example wet gluten, stabilization time, extendability and so on. At last according to the analysis results of each milling systems we make different blending flour on line project to produce the different special flour. For example Hamburger flour, noodle flour, dumpling flour, Saqima flour and so on.In conclusion, through studing on the quality characteristics of wheat flour from each milling systems we can research and develop a lot of special flour. The special flour isn't only promoted additional value, but also maked the best use of everything. Finally it can make flour enterprises acquire the more income.
