This topic of wheat in the national collection of 50 different hardness as experimental material,the single grain of characteristic tester is used to test the hardness and the average water content of wheat,and on this basis to adjust the moisture of wheat,wheat reached for the moisture content of the coal pulverizing,mill by experiment on wheat flour processing,recording and calculation system of wheat powder,flour yield,the comparative analysis of the correlation between wheat hardness and flour yield.Part of the experimental grinding powder through a sieve and laser particle size analysis method for determination of the management,analysis of different wheat flour particle size distribution and the correlation between wheat hardness.Part of experimental grinding powder by near infrared analyzer and Brabender powder mass tensile experiment,using the method of correlation analysis,analysis of the measured by near infrared data and the correlation between opaque tensile curve.Another part of flour by measuring whiteness,chromaticity and bran content,to analyze the correlation of these indicators.This experiment based on the analysis of wheat and wheat flour yield and hardness of each powder way out of proportion correlation found that wheat hardness with wheat flour yield showed significant positive correlation,correlation coefficient R of 0.224,compared with wheat flour skin of powder proportion,showing a significant negative correlation,the correlation coefficient R is 0.815,and flour heart powder proportion was significantly positive correlation,the correlation coefficient R of 0.815.Wheat hardness analysis found that the correlation with wheat flour particle size of wheat hardness and the D10 value has significant negative correlation,the correlation coefficient R is 0.235,but with the D90 value has significant positive correlation,the correlation coefficient R of 0.328.Wheat hardness and 8XX top of the sifter,9XX top of the sifter,11 XX bottom of the sifter and 11 XX top of the sifter have very significant negative correlation,and no significant correlation between 10 XX on the screen,has a little influence on the particle size of wheat flour,wheat hardness but significantly affect the wheat flour particles and large particles.Wheat hardness and strength of the correlation analysis and bibulous rate is significantly positive correlation,correlation coefficient R of 0.795,in the same grinding conditions,the higher the wheat hardness,bibulous rate is higher.Wheat and wheat hardness white degree of correlation analysis,the hardness of wheat and wheat is significant negative correlation,correlation coefficient R of the white degree is 0.749;Bran was significantly positive correlation,correlation coefficient R of 0.296;Other significant negative correlation with another brightness,correlation coefficient R of 0.352.
