As an important matter of sustainable development,clean production was currently considered and taken worldwide including reducement of nature resource consumption.Unit consumption of water was very different in Chinese breweries,which was also different from the international advanced level.In this paper water consumption for Suntory Brewing (Shanghai) Co.Ltd(SSB) was particularly analyzed and studied,the possibility and feasibility of reducing water consumption was discussed on the basis of practice situation.The main conclusions were as follows:In a brewery water which was consumed could be divided into three parts,including brewing water,cleaning water and supplementary water in which the ratio was approximately 1.5:2:1.Duo to two-third forming beer,reusable and recycling brewing water was the part used for cleaning and chase,which water consumption could be reduced 0.15m~3/kL;the water lose in brewing water making process could be minimized.Cleaning water,50%of total water consumed,was mainly considered aspect of reducing water consumption because it was very clear or easily clear by treatment after use,which the water consumption could be reduced 0.45m~3/kL.Without contact with beer or brewing vessel,supplementary water could be recycled or extended use period by circumfluence or adding different chemicals,which water consumption was reduced 0.25m~3/kL.Expanding monthly and daily output was effective way to reduce water consumption non-technically.Comparing to semi-full capacity brewing and packaging at SSB,the water consumption was decreased 0.15m~3/kL by full-capacity brewing and packaging.The ratio of reducing water consumption in brewing process was less than it in non-brewing process, 30000m~3 water(0.15 m~3/kL) could be saved annually by total measures in brewing process.The key point of water consumption conduction was renovation of equipmqnt and technology.Because brewing process was very important to beer quality and the request of equipment and pipe was very strict,water was not considered for reusing.Reusing and recycling of cleaning and supplementary water should be taken as the key point for reducing water consumption.This part was taken as the 85%of total share of water consumption decreasement in recent 5 years at SSB.The measuring system for different kinds of water and water consuming departments should be established.It was the basis for reducing water consumption.The key point was to check-up the leakage of pipe.It should be implemented if it was permitted.In 2007 water consumption of SSB was 5.93m~3/kL.It would be decreased along with other water consumption measures and keep up with advanced national level year by year.
