Because of long history and tortuous process of Manchu, diet culture has its own features, and impact today's diet culture significantly. To study Manchu diet culture system will provide useful complement to today's Chinese minorities'diet culture. But nowadays, studies of Manchu diet culture of academics are more fragmented and unsystematic. This paper will try its best to take more scientific methods to discuss Manchu diet culture comprehensively and systematically. The purpose is to cause concern of academics, and provide more significant complement to Manchu diet culture.We will discuss introduction of this paper with two parts: Firstly, according to analysis of study value and situation of Manchu diet culture, this paper illuminates that we have more area to study Manchu diet culture system. At the same time, the study of Manchu diet culture system has too much significance, and in favor to finish history of Chinese minorities'diet culture. Secondly, clarify study clue of Manchu diet culture. As well as developed history of Manchu, seek developed track of Manchu diet culture and form historically developed clue of Manchu diet culture. And according to traditionally characteristic diet to study Manchu diet culture, and continue to involve contribution of Manchu traditional diet culture to Chinese diet culture.There are four parts of text:The first chapter discusses the development from Nvzhen to Manchu. There are two parts of first chapter. Firstly, introduces development of predecessor, and makes people have clear understanding of development of predecessor. Introduces emphasized origin, development, flourishment, debility, differentiation and recombination of Nvzhen in Ming Dynasty. Then, narrates forming of Manchu.The second chapter discusses development of Manchu diet culture. This chapter can be divided three parts. 1. Introduces Manchu diet culture of predecessor. Firstly, from diet characteristic, cooking, diet modes, drink, instruments of diet and diet custom, these five parts to introduce fishery and hunting period of Manchu diet culture of predecessor. Secondly, from staple food and subsidiary food( includes corns, meat, milk and dairy products, dish and flavoring), wine, tea and other drink, cooker and diet instrument, memorizer three aspects to introduce Manchu diet culture of predecessor in Nvzhen. Secondly, introduce diet culture of Manchu Manchu diet culture of predecessor before came to pass. Mainly introduce characteristic of that period. 1. Narrates differences between civilian diet culture and nobility diet culture in source of food, diet content, diet instrument, dinner scope and so on. 2. Narrates annex in latter King Dynasty and incessant wars. To logically use national source, domination class often printed ordination, and restricted everyman's diet. And then leaded country policy influence to Manchu diet culture in nowadays. The mainly behaviors are: 1) According to collection system, we put domestic salt and food relations together, and used them united, as well as population to distribute. All of these confirmed provision of domestic salt and food. And country united admeasured food and livestock, even diet instrument. 2) To restrict some scopes of eating and shopping of some food. Thirdly, discuss enlargement of the diet exchange among Manchu and other nations according to incessant conquer and dilatation of Manchu, then the adding of diet culture enhanced. The behaviors are: 1).Foreign food was enhancing. 2). Foreign diet instruments were enhancing. 3). Foreign diet cocking methods were going to Manchu society. This kind of adding enriched Manchu diet culture, and brought development of Manchu diet culture. Fourthly, discuss consummate of diet system in that period. Main behaviors are: 1) Noble dish systems are going maturity. 2) Wedding feast systems are going maturity. 3) Buries diet systems are going maturity. 4) Fete diet systems are going maturity. In conclusion, along with enhancement of diet content and social development before Manchu went pass, more developments of Manchu diet culture is going maturity. All of these put a basement to development of Manchu diet culture. The third part introduces Manchu diet culture after went pass, and narrated Chinesization of diet culture and highest combination between Manchu and the Han nationality.The third chapter, characteristic food of Manchu diet culture. There is much famous characteristic food in Manchu diet culture, in this chapter we make particular description to 5 kind food of Manchu diet culture: 1. High-colored Manchu candied fritter; 2. The most typical traditional snack; 3.Spicy lain boiled pork black pudding; 4. Chaffy dish of Manchu; 5. World-famous Man-Han style Banquet.The fourth chapter, discuss contribution of Manchu traditional diet culture to Chinese diet culture. The first part, Manchu traditional diet culture enriched content of Chinese diet culture; the second part, partly discuss profitable actions of Manchu diet culture during form and development in northeast cuisine and Beijing cuisine.
