| Industrial development and present consume situation of sweet corn at home and abroad were firstly presented in this article. Nutritive value and economic benefit of sweet corn were analyzed. Reuniting the develop trend of juice with the lacking of sweet corn beverage production of scale, the primal problems in fruit nectar process were analyzed and the key technology of sweet corn beverage development was presented as a study. This study was based on the technology of the garden spgarden stuff materiel wet superfine grinding, going deep into viewing the morphological structure of the dregs from sweet corn beverage process. It's sure that the dregs are made of seed coat and embryo, among the rest seed coat is more than embryo. The physical structure characteristic of sweet corn seed and it's comminution mechanism were studied, good effect shearing equipment such as colloid mill, high-shearing disintegrators and cutters were chose to study the comminution mechanism and have experiments. Compared the dregs, the high-shearing disintegrators have the best effect. The single factor experiments and orthogonal experiment on the key parameter of high-shearing disintegrators have been done. The result is that the best parameter combination of high-shearing disintegrators is as follows: shearing time 3min, shearing rate 50Hz, the gap width of stator 0.12mm.Then, by using response surface methodology, finding the function expression between factor and response value, namely regression model.Comparative research on stability of single hydrocolloid, two types of hydrocolloids and three types of hydrocolloids mixing have been done. In conclusion, a blend stabilizer consisting of xanthan, LBG and guar gum in ratio of 2∶1∶2 was taken as the juice stabilizer. In addition, blend stabilizers of sweet corn beverage with different concentrations of pulp (15% and 25%) were discussed in the dissertation. Sweet corn beverage with different concentrations of pulp has different blend stabilizers formula.According to adjusting process conditions, the key technology and equip of wet superfine grinding for sweet corn was presented, which provide theory and experimental guide for sweet corn beverage development and industrialization production. At last, product standard and initial cost keeping were presented to do risk analysis, in order to provide reference frame for the feasibility of sweet corn beverage investment. |
