The mixed juice float clarify scum in sugar mill is by-product by float clarify technology, because the men has not researched integrate appliance on the mixed juice scum until now. These scum is usually merged into mud juice in deposit pool, then are filtrated together, finally are merged into filtrate mud, by this way, it brings on much loss of organic no sugar specially value componential, or they enter product course again, and affect badly quality of sugar product, scum synthesis applianc will be an important factor to restrict industrialization application on all kinds of float clarify technology in the course of mix juice being dealed in sugar cane. Because mix juice scum comes from the former of whole refine sugar course, it avoids organic no sugar effect in the course of some technics such as calcareousness, phosphorate, sulphur, second heat and etc, and it protects antioxidant activity substances into being destroyed, and it helps to obtain greatly organic no sugar and make it applied circularly, economize calcareousness, phosphorate, sulphur and some other chemistry reagents in the latter technics course, for extracting activity substances, it is easy that we reach high pure and great energy product from mix juice scum than filtrate mud, what's more, it is less difficulty and lower cost of separation.In the course of refine sugar, many activity substances such as polyphenol and flavone may react with iron or oxygen, and some matter with high color is made, for it, they become"bad factors" that affect seriously finished sugar quality. Howerer, as savageness polyphenol antioxidation substances especially water-solubility polyphenol matter, because it is absorbed easy through cell membrance, and they have physioloyical property such as restraining sick bacill, virus, mutagenesis, anticancer, antioxidation and etc, so they have been used widely in fields of food, medicine and cosmetic, it becomes a research hotspot of food dietetics and biomedicine at present.Researched on separation and antioxidation activity, it improves and optimizes refine sugar course, develops integrate appliance specially organic no sugar matter of by-products in sugar mill, makes full use of resource advantage on refining sugar in Guangxi, and looks for a new source of water-solubility antioxidant activity substances, so it is great realistic significance. The main research contents and results of this thesis are reported as following:First, research water-solubility chemical components of the mixed juice scums in sugar mill by making use of tube system prediction. The result demonstrated that chemical components included mostly amino acid, peptide and protein; sugar, amylose and glycoside; tannin; organic acid; flavone; anthracene; polyphenol; coumarin and lactone; cardenolide; phytosterol and terpene; alkaloid and nitrogencontaining compounds .Secondly, we researched water-solubility polyphenol matter in the fractionation of ultrafiltration separation on the mixed juice scums in sugar mill, and chose activity products group by ultrafiltration separation. Products could be separated into five components (>50kD, 10kD~50kD, 5kD~10kD, 1kD~5kD and <1kD) in terms of molecular weight, by studying antioxidant activity, polyphenol, color and solid yield. Study result indicated: 5kD~10kD group had strongest antioxidant activity, but lower polyphenol yield; >50kD group was highest polyphenol and color, but with worse antioxidant activity; <1kD group is highest solid yield, but with lower polyphenol and worse antioxidant activity. So, we consided <5kD as our research group.At the same time, we researched antioxidant activity, polyphenol and color on all kinds of groups, in the course of refine sugar, group matter with high color was not high polyphenol and strongest antioxidant activity, and group matter with high polyphen was not strong antioxidant activity, so they had no relation among them.Thirdly, macroporous adsorption resins separation and optimum technical condition of water-solubility scum polyphenol. Measured by five macroporous adsorption resins (DM-301, S-8, ADS-17, AB-8 and ADS-8) and scavenging effect of samples on DPPH·, it found that AB-8 macroporous adsorption resin was feasible for separating polyphenol from scums, and the optimum conditions were researched as following: 1mL/min for current velocity of adsorption, 2.50mg/mL for feeding concentration and 70 % for alcohol concentration. Fourth, dynamics was researched on antioxidant activity of scum polyphenol by AB-8 macroporous adsorption resins. On the base of adsorption-pervasion theory, we analyzed experiment dates of adsorption and desorption on static state and dynamic state, and got two expressions on Langmuir and Freundlich, but Langmuir equation was better than Freundlich because of relation parameters, besides, we researched dynamic character by curve of static and dynamic adsorption and desorption.Fourth, dynamics was researched on antioxidant activity of scum polyphenol by AB-8 macroporous adsorption resins. On the base of adsorption-pervasion theory, we analyzed experiment dates of adsorption and desorption on static state and dynamic state, and got two expressions on Langmuir and Freundlich, but Langmuir equation was better than Freundlich because of relation parameters, besides, we researched dynamic character by curve of adsorption and desorption on static state and dynamic state.Fifth, measure of antioxidant activity by the way of different purification methods. Referring Vc, we measured antioxidant activity on macroporous resins water extraction sample (A) and purification sample (B) by five different systems (DPPH·,·OH, O2-·, NO2- and deoxidant activity) . Study result indicated: Both of samples had scavenging effect on DPPH·,·OH, O2-·and deoxidant activity, what's more, in these system their antioxidant activity from strong to puny was B, A, Vc, so separation effect by macroporous adsorption resins was better.Sixth, measure analysis and appraisal on samples. It had polyphenol detected by determine the nature analyse, at the same time, content and purity of target object were measured by fix quantify analyse. The result showed sample A and B contained galic acid, and the content was 12.42mg/g, 23.37mg/g respectively, besides, latter of them was higher than from cane mixed juice document reported(12.61mg/g), but both of them had hardly catechin , epicatechin, pyrocatechol, chlorogenic acid, what's more, galic acid was 47.67% of whole polyphenol in sample B.
