Jujube named herb zizyphus jujuba sometime, is the fruit of Chinese jujube. Chinese jujube originated in our country, cultivation history was three thousand years In China. jujube not only has the very high nutritional value, but also has medicinal health care value, Is a good fruit. In recent years, as people living standard, and health care consciousness enhancement, jujube nutritional value and medicinal care value were consistent attented by researchers. In this paper, research the jujube polyphenol extraction, separation, composition analysis, in vitro Antioxidant Activities and so on, obtained the following conclusions:1. polyphenol were extracted from jujube with technologies of Solvent Extraction and ultrasonic-assisted extraction. Results showed that ultrasonic-assisted extraction was the best extraction technology. The optimum extracting conditions were ultrasound power150W, extracting time20min, ultrasonic temperature66℃, alcohol volume fraction70%, the mass ratio of material to alcohol1:16(w/v).Under this condition, the yield was0.76%. The optimum technologies for Solvent Extraction were alcohol volume Fraction70%, the mass ratio of material to alcohol1:20(w/v), extracting temperature60℃, extracting time1.5hour, the yield was0.668%.2.HP-20resin was determined as macroporous adsorption resin according to the screening for a variety of resins.At the same time,the optimum technology was selected under the condition of amount of loaded sample100mL, flow rate1.5mL/min, concentration1.5mg/mL, PH5~6.0,70%ethanol solution as eluent with flow rate of1.5mL/min and eluent dosage of3BV, the purity of81.2%was obtained.3. jujube polyphenol has9kinds of elements by high performance liquid chromatography (HPLC) detected, rutin,chlorogenic acids, gallic acid, caffeic acid, protocatechuic acid, ferulic acid, cinnamic acid, the coumaric acid and quercetin. Analysis high performance liquid chromatography (HPLC) figure of red jujube polyphenol coarse extract and purification, I found Polyphenol components purified material content is generally higher than that crude extractings, Some unknown components content have also changed, number of impurities decreased significantly.4. The crude polyphenol of jujube has certain reducing power, and it can remove hydroxyl radicals, DPPH and superoxide anion free radicals,clearance capacity is proportional to the concentration of polyphenols. Research results show that the jujube polyphenol has the very good antioxidant activity in vitro.
