| With the development of beverage industry, more and more sugar forbeverage industry was required. The quality specification of white sugar forbeverage industry was very rigorous. The solution, which resulted in plantationwhite sugar dissolved in water, was clear and transparent with no floc depositionunder acid conditions. China is one of three largest sugar-producing countriesthroughout the world, but most of sugar was plantation white sugar, which wasmanufactured by phosphosulfitation process. These plantation white sugarcouldn't meet the quality requirement in beverage industry because thereappearance acid floc when plantation white sugar was dissolved in water underacid conditions. The acid floe existing in sweetened beverages and soft drinksmade beverages cloudy, which degraded the berverage quality, sometimes iteven deteriorate beverages. The main components of acid floc oversea weredetrans, starch, protein, other polysacharides and inorganic SiO2 etc.. There beenfew reports on acid floc in China so far.The compositions of acid floc in plantation white sugar was analyzed byfood analysis method, and their influence on acid floe forming were discussedrespectively in this research, then a new fast acid floc determination method inplantation white sugar was brought forward based on this research. The resultsshowed that the compositions of acid floc in platation white sugar in China are starch, Polysacharides, protein, ash fraction and lipides. The polysacharides inacid floc are galactomannan and arabinogalactan; the formation of acid floc wasenhanced by amylose, and the mutual actions between starch, Polysacharidesand protein played an important role in the formation of acid floc. The new fastdetermination of acid floc method for acid floc in plantation white sugar broughtforward was much faster and more reliable than splecks determination method.It is helpful to improve the quantity of platation white sugar for sugar mills,especially which adopts phosphosulfitation process in China, and the new fastdetermination method for acid floc brought forward was good method todetermine timely the acid floc content in sugar mill. |
