Abstract:Mulberry, is mature collective fruit of Morus alba L.They are cultivated in most provinces and districts of our country.Mulberry red pigment is a kind of anthocyanin pigment extracted from mulberry.They have good water-solution.They are blue in alkali solutions and claret in acid solutions with good stability in latter solution.They can enrich blood,nourish brain,benefit liver, lowering blood lipid, smooth gut and have diuresis and antioxidation effects,etc.The paper studied the extraction of mulberry red pigment by solvents with mulberry fruit residue. Stability and Specific property of antimicrobial activity ,studied the microencapsulation ofmuberry red pigment.1.We studied the technology of extraction mulberry red pigment by solvents.The result indicate: ethanol/water ( v:v = 3:2) with 0.01% HCl as the solvent, the fruit/ solvent ratio was 1:20,extracting 1.5 h at 20℃, and the yield of the extracted pigment achieved 93.68% .2. The stability test of mulberry red pigment showed: mulberry red pigment had inferior stability to pH, ray, heat, oxidizer and reducer; Antiseptic, glucose, fructose Zn2+,Ca2+,Mg2+,Ba2+,Na+,K+and had little influence on stability of mulberry red pigment; Al3+can add the color of mulberry red pigment; Mn2+,Sn2+,Fe3+,Cu2+had great influence on stability of mulberry red pigment.3.We studied the inhibitory effects of mulberry red pigment to bacterials, mildew and microzyme usually found in foods.The results indicate:mulberry red pigment has strong inhibitory effects to E.coli and weak to Staphylococcus aureus and Bacillus subtilis,but has no effect to mildew and microzyme.4.We studied the technological processes about manufacturing microcapsules with piercing method using mulberry red pigment as pore material and sodium Alginate as wall material and determined optimal technological conditions of making capsules: 3% sodium Alginate, 2% CaCl2,solidify 1 hour,the ratio of red pigment with sodium Alginate is 1:2,in which condition the embedment percent is 90% and the stability enhanced obviously.The mulberry red pigment capsule is purple granul with round,smooth,equal shape.
