The influences of different pretreatments (the total fish and the fish without bowels), different kinds of air packaging (air, vacumn and modified atmospheres) and modified atmospheres packaging(MAP) with various gas proportions (30%CO2/70%N2; 60%CO2/45%N2; 75%CO2/25%N2) on the quality and shelf-life of fresh large yellow croakers preserved under 4℃±1℃were evaluated here by sensory evaluation and microbial, physical, biochemical analysis. The results were as follows:1. Compared with air packaging, the packaging with 60% CO2 or more could extend the shelf-life of breeded large yellow croakers from 6 days to 12 days.2. MAP could inhibit the growth of aerobic, anaerobic, coliform bacteria, then extend the shelf-life and keep the quality of breeded large yellow croakers.3. MAP decreased the production of TVBN and delayed the spoilage of breeded large yellow croakers.4. MAP prevented the increase of K value, kept the breeded large yellow croaker fresh in the initial preservation.5. CO2 dissolution in the process of MAP could decline the pH value and increase the drip-loss of large yellow croakers during the storage.Based on the MAP research, the kinetics changes of specific spoilage organisms in cultured large yellow croakers during the storage under 4℃±1℃with the optimum MAP were studied. The kinetics model of Photobacterium phosphoreum could be well described by a Logistic equation and had an excellent correlation(R2=0.9887). The relative error between predicted shelf life and the real one was -2.62%, which suggested that this model could evaluate the microbial quality and remaining shelf life of the cultured large yellow croakers stored under 4℃+1℃, rapidly and reliably.
