The nitrite is one kind of food additive,which can exist in the environment water and food more or less. Cancer and deformities will be caused by the excessive nitrite. Thus, The Determination of the nitrite already became one of important points in the environment and food examination.At present there are many methods to determinate the nitrite ,for example,the spectrophotometric , the illumination analytic method, the electrochemistry, the chromatography and so on. This paper was studied the determination of the nitrite by indirect fluorescence spectroscopy and the indirect atomic absorption spectroscopy, and a new way of the determination was provided.A new spectrofluorimetric method for determination of nitrite is based on the oxidation of thiamine by nitrite in a basic medium to yield the fluorescent thiochrome. The fluorescence in tensity is linear over the range of 0.674~8.00mg/L for nitrite with correlation coefficient of 0.9955. The detection limit is 0.202mg/L and the relative standard deviation is 2.11 (n= 11). The recoveries are between 92.1% and 106%. The method was applied to the determination of nitrite in water and food.We also determinate the contant of nitrite by indirect AAS.Nitrite can react with Mn(IV) and Co( II) respectively under certain condition . Based on the performance characteristics, the proposed methodology was found suitable for the determination of nitrite in pickle and ham. The test results were compared with the national standard and the relative error in 96.6%~104%, 93.2%~107%.
