Fish oil is a kind of natural functional food and its availability is high. As a kind of additive, fish oil can be added into food ,for example: bread, ice cream , creamery, baby milk powder, yoghourt etc. Its main active components are PUFA such as EPA (Eicosapentaenoic acid)and DHA(Docosahexaenoic acid). EPA and DHA abundant in fish oil have healthful physical effects on cardiovascular disease, anti-inflammation, anticancer, maintaining neural growth, slowing aging, etc. The study on purification of EPA and DHA from fish oil is becoming a focus recently. At present the development of functional food of fish oil in our country is short. The method of extraction was organic solvent, and the quality of the product was not very good.In this study molecular distillation (MD) was used for extraction of EPA and DHA in fish oil. The objective of this work is to obtain the optimum technical conditions for continuous extraction of EPA and DHA from fish oil using molecular distillation. The content of EPA and DHA in fish oil is respectively 7.94% and 10.05% . After a class molecular distillation , respectively , the content of EPA and DHA become 13.93% and 31.4% . However, after three class molecular distillation , the amount content of EPA and DHA reach to 72.51%. For confirmation the effect of operation pressure , operation temperature, feed temperature and rotor velocity ,orthogenesis tests were carried out . and get hold of the best technical condition to enrich the EPA and DHA of fish oil.The study shows that the technics of molecular distillation is applicable to open up Health care matters and drugs .
