Monascus pigment is an excellent stainer. The production of monascus pigment extracted from solid state fermentation rice is still the main method of most domestic monascus pigment manufacturers. How to optimize extract technology of monascus pigment from solid state fermentation, how to extract monascus pigment of higher red color values and lower citrinin, how to maintain the stability of monascus pigment, all these are pending issues concerning monascus pigment extracted from solid state fermentation under existing conditions.This study paper includes the following contents:1. The production of monascus pigment rice by solid state fermentation of different bacteria seeds, to use the content of higher red color values and lower citrinin as indicator, to select monascus pigment M8# which is able to produce excellent monascus pigment rice, while to optimize production conditions of monascus pigment extracted from solid state fermentation.2. To use color values and citrinin content as indicators, to carry out single factor trial at different extract density, extract ratio, extract time, extract temperature, extract pH values while using solvent ethanol, to study the extract effect of monascus pigment under single factor of ethanol, to use solvent carbinol and ethanol and carry out orthogonal trial of five factors and four horizons, to obtain the best carbinol and ethanol extracted designs of monascus pigment, to use supercritical CO2 extraction to extract monascus pigment, the result indicates the extremely low content of citrinin of monascus pigment by supercritical CO2 extraction.3. To compare the effect of color values of monascus pigment under different light conditions, to study the light stability of monascus pigment, the result indicates the descending order of favorable light conditions to maintain color values of monascus pigment is, dark condition > ultraviolet radiation condition> natural light condition> sunshine condition, there is little difference of citrinin content among monascus pigment samples under all kinds of light conditions.
