| Phytosterols (plant sterols) are a group of components naturally occurring in all plants and are structurally similar to cholesterol. Until now, numerous unique phytosterols have been identified, p-sitosterol, campesterol, and stigmasterol account for the largest proportion in most sources, and the saturated phytosterol are called "phytostanol", such as sitostanol and campestanol. The results of epidemiology and patients trials in recent years have proved the various physiological effects of phytosterols, such as decreasing the serum cholesterol, protecting against atherosclerosis, help to cure the prostate hyperplasia, anti-cancer etc. Therefore, it has great meaning to establish the analysis method of plant sterol in China, and determining the contents of plant sterols in plant foods commomly consumed in Chinese people so that we can evaluate the dietary intakes. All these will provide basic data on the effective utilizing of plant food in our country and scientifically direct the dietary of customers. Objective :To establish the standard analysis method of plant sterol by GC technology and quantitatively determining the distribution and content of plant sterols in about 150 kinds of common food as sorted by 7 categories. What's more, the dietary intakes of plant sterols for the citizen in our country is evaluated by the data obtained. Experimental MethodsIn estabolishing the analyzing methods, the pretreatment procedure for common foods and GC conditions were optimized, including acid hydrolysis, saponification, extraction, derivation conditions etc. Secondly, 7 categories of food samples were selected base on , containing plant oils, cereals, legumes, vegetables, fruits, tubers and nuts. The concentrations of P-sitosterol, campesterol, stigmasterol, p-sitostanol, and campestanol in 150 samples were analyzed by GC methods, moreover, the total contents and the relative contents were calculated.
