Objectives: Curcumin was obtained from Chinese Material Medical—curcuma, which was one of the richest sources in our country. It was widely used in the field of food. Documents showed that it also had lots of pharmic effects. Because of its unstability and insolubility, clinic application of curcumin was limited. To improve its stability, absorption and bioavailability, curcumin was made into inclusion complex and microcapsule. It was found that the three preparations could increase solubility and were much more stable than curcumin.Methods: Stability of curcumin solution: Curcumin was investigated under different conditions of temperature, light and humidity. The characteristics of curcumin were also studied in detail and the optimum value of pH was determined with UV spectrophotometer. Using constant-temperature accelerated test, the valid date was determined.Stability of preparations: To observe the stability of curcumin-β-cyclodextrin(β-CD), curcumin-HP-β-cyclodextrin and microcapsule of curcumin, we made a set of tests of the inclusion complex and microcapsule on their stabilities, such as tests under lamplight, high temperature, humidity and constant-temperature accelerated test.
