Studies On The Key Craft Of Streaming Green Tea In Chongqing

Green tea, which is called non-fermented tea, is made from fresh tip of tea plant as material by fixing, rolling and torrefaction. Green tea reserved more natural substance which contribute to feature of green leaves and water, strong astrigency flavor. According to last scientific research, contents in green tea have many functions which other kinds of tea do not have such as anti-caducity, anti-cancer, sterlization and inflammation diminishing. Generally, green tea is divided into roasted green tea, baked green tea, withered green tea and steaming green tea. Statistics shows that in 2003 amount of green tea export of China is 259,900 t, including 181,700 t green tea, which occupies 69.91% among three staple teas. Although the increasing trend of green tea especially in developed country, part of our country's bead green tea, eyebrow green tea has a yellow boiled water and with a burnt flavor. This is contradicted to the taste of burgeoning green tea consumers. Steaming green tea has a relatively green boiled water and a fresh flavor. This is in flavor of green tea consuming tide. Presently, this trend will be increasing, with the automatic manufacture throughout the course, period between manufacture and export shortens. So, streaming green tea will be likely mainstream product in international market.The manufacture and distribution of streaming green tea mainly in Japanese. Because of the deficiency of output in Japan, it imports streaming green tea from China. Mostly Japan provides whole set machine, China provides workroom and fresh leaves. Product is sold to Japan. Take Zhejiang Province as example, now there are more than 40 product lines(including which are made by our country), each product has a yearly output of 200-250 t, totally more than 8000 t. these product are also sold to Korea, German, French, America besides Japan. In Sichuan area three product lines have put into production, these green tea is also sold to Japan. Chongqing fetched in a Japanese streaming green tea product line in 2004,4,27. But compared to streaming green tea which manufactured by Sichuan area using foliole, Chongqing product has many problem such as more yellow and dark, loose strip, much chipping. It only could be exported by sold to other company with mixing it up with other tea. How to settle quality problem of Chongqing streaming green tea is the topic of this paper.This paper compared streaming green tea production line craftwork parameters between Sichuan and Chongqing, at the same time considering chemical contents of both finished product.
