Research background:Nowadays, the safety of foodstuff is becoming an important thing for management department and consumers, and it is necessary to improve the food safety, produce in legalization and manage in standardization. In the latest 30 years, HACC has been approbated and accepted as a food safety system in the world. The focus on food safety and the standing arises of infectious disease are the power of taking HACCP into application. Objiectives:(1) To ensure deepfreeze vegetable safety and hygiene and reduce the food borne disease caused by deepfreeze vegetable through putting hazard analysis critical control point into practice during food processing.(2) To explore the mode of HACCP application in manufactures of deepfreeze vegetable products.Research methodBasing on the investigation of all manufactures of deepfreeze vegetable in Taian, we selected 3 manufactures as experimental subjects of HACCP. .The study was conducted according to principles and methods of HACCP. All the processes including purchasing of raw materials, the washing of materials , the pretreatment process of the raw materials; scalding and heating the raw materials; deepfreezing the raw materials; the antisepsis and placing the containers and wrappers; packing, placing and transporting productions were researched and Hazard analysis was taken by investigation on productive process combining with laboratory test in order to determine the CCPs through hazard analysis ,for the propose of taking effective measures to control the CCPs.
