HACCP Hazard Analysis and Critical Control points,English Hazard Analysis Critical Control Point with letter abbreviation,it is a food safety assurance system,the food industry use it throughout the supply chain of food Hazard Analysis,through the effective prevention and Control measures,implement strictly monitor for each key link,so as to realize the effective Control of the quality of food safety and hygiene.How to apply HACCP as the means of risk management mode,to recognize the role of enterprises in the food chain and reduce the risk of food hazards exist,ensure the enterprise to the final consumer to provide safe food,this is the whole process of food enterprise,department and company leaders must think and need to solve the problem.HACCP is a system engineering,it should be of the production process,machine,material,method,ring,measuring and GMP effective union,into the company daily management,identify the hazard analysis and control of the supply chain,to ensure that the whole food chain to final consumer food safety.We analysised the HACCP application prospect of risk management theory,research idea development present situation,has carried on the summary analysis,proposed the HACCP as a means or a tool of risk management,in the life of the product application necessity and feasibility.We comprehensive analysis of food safety related to the consumption link the presence of foodborne hazards status.May be due to any of the food chain link introduction food safety hazards,necessary to full control of the whole food chain,using PDCA method to raise the level of control,the process of the enterprise food safety must go through the joint efforts of all parties in the food chain to ensure.In Hebei Welcom pharmaceutical co.,LTD.,food additives,vitamin C products as an example,combined with the metal pollution complaints case analysis to seek how to apply HACCP as the means of risk management mode,this paper expounds the use of HACCP as the means of risk management model for the importance of reducing the risk of the enterprise and based on the principles of HACCP food safety management system of risk management.
