Along with the third industry and urbanization rapid developing, the bite and sup trade has increasing proportion in cities economy development. But the dietetic custom in our country is different from overseas, we process food mostly by frying and decocting. Its rapid developing prospers cities economy, but it does a lot of harm to the environment also. At present the cooking fume is primary pollution source with industry exhaust gas and automobile exhaust gas in cities pollution. In every family, the cooking fume pollution can't be ignored also. The cooking fume not only influence cities environment, but also do harm to people's health. The internal and overseas technological operator have researched about cooking fume purge technology and equipment and had great progress, but it is absence of effectual cooking fume equipment. So it is important to research and develop steady and effectual equipment in the base of our country's actuality.Summarizing cooking fume purge technology and equipment research actuality and existent issue, the thesis analyses the new purge equipment's principle. It expounds menstruations and course of cooking fume, analyses the new purge equipment's speciality and gains some capability parameters of design. The dissertation researches flow field of cooking fume leting, designs purgative system by theory analysis and engineering practice. In order to predigest system design, the paper adopts computer aided design through program and VBA of AutoCAD tool. The still pressure box and frequency conversion constant flux technology reduce system energy losing. In order to improve system capability, we adopt some monitoring measures also.
